Cashews are a beautiful creamy nut that can be added to stir fries, cakes and salads. When adding cashews to your diet you gain a world of abundant nutrients. Cashew nuts contain 5 grams of protein for every 30 grams of nuts, and are packed full of minerals such as manganese, zinc, copper, magnesium and phosphorous.

Cashews for Life : Cashew Crème Recipe


  • 1 cup cashew nuts
  • 1 cup unsweetened apple juice
  • 2 tsp melted coconut oil
  • 1 tsp vanilla extract
  • ½ cup agave nectar (optional – cashews are naturally quite sweet)
  1. Soak cashews overnight
  2. Once soaked bring the cashews and juice to the boil and simmer for about 5 – 10 minutes
  3. Leave to cool for a couple of hours
  4. When cool drain the cashews keeping the liquid
  5. Blend the cashews, vanilla, coconut oil and agave nectar adding small amount of the juice till you get desired texture. You should only need a little juice.
  6. When ready, transfer to a storage container and refrigerate.

This yummy Cashew Crème will keep for a couple of days. Use as a topping for your favourite desserts or fresh fruit and enjoy!
