Cashews are a beautiful creamy nut that can be added to stir fries, cakes and salads. When adding cashews to your diet you gain a world of abundant nutrients. Cashew nuts contain 5 grams of protein for every 30 grams of nuts, and are packed full of minerals such as manganese, zinc, copper, magnesium and phosphorous.

Cashews for Life : Cashew Crème Recipe
- 1 cup cashew nuts
- 1 cup unsweetened apple juice
- 2 tsp melted coconut oil
- 1 tsp vanilla extract
- ½ cup agave nectar (optional – cashews are naturally quite sweet)
- Soak cashews overnight
- Once soaked bring the cashews and juice to the boil and simmer for about 5 – 10 minutes
- Leave to cool for a couple of hours
- When cool drain the cashews keeping the liquid
- Blend the cashews, vanilla, coconut oil and agave nectar adding small amount of the juice till you get desired texture. You should only need a little juice.
- When ready, transfer to a storage container and refrigerate.
This yummy Cashew Crème will keep for a couple of days. Use as a topping for your favourite desserts or fresh fruit and enjoy!
