High Protein Root Vegetable & Bean Soup

One of the challenges of being a vegetarian is being able to find enough protein in the foods they consume. Protein is an essential nutrient that acts as the building blocks for every system. Adequate protein helps with tiredness, depression, mood swings, skin issues and just about everything else. We need protein to help with weight loss too, when we eat protein we send a message to the brain that tells your stomach that you are full, so you do overeat.  Beans are a great source of vegetarian protein, lentils have about 18 grams of protein and split peas have about 25 grams of protein. This soup is a perfect way to include many of the root vegetables and antibacterial spices.

Root Vegetable Soup and Bean Soup Recipe

  • I cup of lentils
  • 1 Tbsp. coconut oil
  • ½ tsp. mustard seeds
  • 2 curry leaves
  • ½ tbsp. turmeric
  • ½ tbsp. coriander
  • 2 tbsp. of paprika
  • 2 tsp ginger
  • 2 small onions (chopped)
  • 4 cloves garlic (chopped)
  • ½ pumpkin
  • 3 carrots chopped
  • 2 sweet potatoes
  • 2 parsnips
  • 1 cup split peas
  • 3 cups water
  • Toasted sesame seeds for garnishing
  • Juice of ½ lemon
  • Salt and pepper to taste
  1. Soak split peas overnight.
  2. Soak lentils for about an hour while your prepare your dinner.
  3. In a large stock pot, heat the coconut oil, when hot simmer onions, garlic and ginger till golden, make sure they do not burn.
  4. Add chopped ingredients and let them simmer for about 5 minutes.
  5. While the vegetables are cooking add the spices gradually so that they coat them.
  6. Drain the beans and rinse them well. You can then add the beans.
  7. Pour in the water, make sure the water covers all the vegetables. Bring to the boil and reduce to a medium heat.
  8. Cook for about 45 mins till the vegetables and tender and the beans are cooked through.
  9. Get a hand blender and blend till smooth. Garnish with toasted sesame seeds.
