This Vegetable and Seed Slice is packed full of fresh seasonal vegetables and ground seeds, providing a delicious and nourishing texture to your meal. It can be served as an entrée or with a salad for a main meal. Easy to make, you can use virtually any vegetables, herbs, nuts or seeds.

Vegetable and Seed Slice

  • Ingredients:
  • 6 Eggs
  • 1 cup almond meal
  • 2 medium carrots (grated)
  • 4 leaves of silverbeet or kale (finely sliced)
  • 1 large red onion (finely chopped)
  • 1 clove garlic (finely chopped or minced)
  • 2 stalks rosemary (finely chopped)
  • 2 tbsp ground linseed
  • 2 tbsp sunflower seeds
  • 2 tbsp pepitas
  • ½ cup goats or cows feta cheese (finely diced)
  • ½ cup coconut oil
  • Pinch of salt and pepper to taste
  1. Method:
  2. Preheat oven to 170 degrees celcius
  3. Grease a cake or lamington tin with coconut oil
  4. In a large bowl beet the eggs until well combined
  5. Add in the almond meal, vegetables, seeds, feta cheese, coconut oil, salt and pepper and continue to mix until an even consistency is achieved
  6. Bake for 30 minutes, or until cooked.
