Description
The fine white powder which may be evident on this seaweed is glutamine, a naturally occurring amino acid which rises to the surface of a wild harvested seaweed as it dries naturally. This is the source of wonderful umami flavour in wild harvested seaweeds and is not to be confused with mould!

Contains naturally occurring iodine. Excessive consumption may exceed recommended daily dietary intakes which could have adverse effects.

Soak in tepid water and gradually warm.
Then use the infused water for stock.
Wrap kombu leaves around fish before baking or chop into stews, soups and stir fries to add nutrients and umami flavour.
