Coco-Berry Gummy Treats

Home made healthy gummy treats

  • 1 can full fat coconut milk
  • 1 ½ C chopped strawberries (or use pineapple instead of strawberries for pina colada gummies)
  • 4 Tbs grass fed gelatine powder
  • 2-4 Tbs raw honey (adjust depending on desired sweetness or a few drops of liquid stevia)
  1. Add coconut milk and strawberry chunks to blender and process until very smooth
  2. Heat mixture over medium heat to a very gentle boil, continue to simmer for a minute then remove from heat
  3. Whisk in honey or stevia, then add 1 tablespoon of gelatine powder at a time, whisking well until completely dissolved
  4. Lightly grease a shallow glass dish with coconut oil and pour in mixture, or alternately use silicon moulds of choice
  5. Cool in fridge for at least 2 hours or until set, then enjoy!
