You can use any berries of your choice in place of the raspberries. Blueberries go very well with this mix also.
If you desire a slightly chewier slice, substitute part of the finely desiccated coconut with shredded coconut.
Dieter's Dream Superfood Coconut Berry Slice
- 3 room temperature eggs
- 1 cup Chef’s Choice Organic Coconut Cream
- 1/3 cup Loving Earth Organic Cold Pressed Coconut Oil (melted)
- 1/3 cup Niulife Organic Coconut Syrup
- 1 tsp Chef’s Choice Alcohol Free Pure Vanilla Extract
- 1/8 tsp Nirvana 100% Stevia powder
- ½ cup Natural Grocer Almond Meal
- 1 tbsp Niulife Coconut Flour
- 1 ½ cups Honest to Goodness Finely Desiccated Coconut
- ¼ tsp Peruvian Pink Sea Salt
- 1 cup raspberries (frozen or fresh)
- Preheat the oven to 175°C. Prepare a 7”x11” baking tray by lining with baking paper and greasing with coconut oil.
- In a bowl whisk together the eggs, cream, coconut oil, coconut syrup, vanilla and stevia.
- In a separate mixing bowl whisk the almond meal and coconut flour. Also add the salt and desiccated coconut.
- Use an electric beater and mix the dry ingredients into the wet ingredients.
- Pour the mixture into the pan.
- Carefully place the raspberries over the slice and push into mix gently.
- Bake for 30 mins, being careful not to let the top get too golden.
- Leave the slice to cool in the tin for 30 mins, before placing onto a wire rack to cool completely.
