When you crave something sweet it is important to not be tempted to go straight for that sugary hit. But when you have planned in advance and want to have something delicious to serve to your guests this is the perfect treat.

Gluten free muffins can be delicious

 

Gluten free Coconut Muffins

These coconut gluten free muffins naturally contain no gluten, sugar, flour or yeast and best of all taste amazing. They have no synthetic sugars or commercial gluten free flours that tend to have an ingredient list longer then an essay. When baking gluten free, keep it simple and don’t get sucked in to the gluten free craze and buy processed products that are by no means healthy.

  • 3 Organic eggs
  • ¼ cup Coconut flour
  • ½ tsp Baking powder
  • 2 tsp Unsweetened organic cocoa powder
  • 3 tsp Coconut nectar (or Xylitol for sugar-free)
  • ¼ cup Dates (pitted and chopped finely)
  • 2 tsp Coconut oil (melted)
  • Desiccated Coconut to decorate
  1. Preheat the oven to 180 degrees
  2. Grease muffin tin
  3. Sift coconut flour, cocoa powder and baking powder into a bowl
  4. Beat eggs lightly in a separate bowl and stir in coconut nectar and coconut oil
  5. Combine wet and dry ingredients, and with a wooden spoon, blend till smooth
  6. Fold in chopped dates
  7. Bake for about 20 minutes
  8. Garnish with some desiccated coconut (and a fresh date – optional)
