Well think again! Here we have dairy AND gluten free pancakes topped with the most nutritious, energising and delicious mousse ever!

Gluten Free Pancakes
Avoiding gluten and dairy is no easy task; but oh so many benefits to gain! Unfortunately, it can be very difficult when it comes to your favourite foods, including pancakes! But a low gluten and dairy diet could mean an end to all sorts of aches and pains throughout the body due to the inflammation gluten and dairy can cause; poor digestion; skin disorders; headaches; poor energy; arthritis; depression; and even ADHD and learning disorders in children! Not everyone has to be completely gluten and dairy free to be healthy and unfortunately many processed foods that are labeled ‘gluten and/or dairy free’ are replaced with even worse ingredients. However, here is a pancake that isn´t replaced by nastier ingredients. Instead, it is replaced by wholesome ingredients that are only filled with simple goodness. The mousse simply contains avocado, bananas, chia seeds and cacao making it exceptionally high in antioxidants, beneficial for preventing cancer and heart disease; good fats, ideal for brain function, skin tone and cardiovascular health; fibre to aid digestion; and not to mention the myriad of vitamins and minerals these ingredients contain.Gluten Free Pancakes with Cacao Mousse
- Pancakes
- ***********
- 1 ½ cups whole rice flour
- 2 eggs
- 1 ¼ cups almond milk (or any other milk of your choice)
- A few pinches of Himalayan rock salt
- 1 tbs raw honey
- I tbs coconut oil (for frying)
- ******************************
- Mousse:
- *********
- 2 ripe avocados
- 2 very ripe bananas
- 4 tbsp raw (organic cacao powder)
- 1 tbsp chia seeds soaked in water for 20 minutes
- 1 pinch stevia – or you can use a tablespoon honey (maple syrup or rice malt syrup. (Sweetener is optional as the bananas offer a great level of sweetness).)
- Mixed berries to serve
- Pancakes:
- In a mixing bowl, sift together the rice flour and salt. Slowly pour in the milk bit by bit, continually mixing. Add the eggs and gently mix together until smooth.
- Heat the coconut oil in a frying pan over medium heat. Use a ladel and scoop the pancake batter into the pan. Cook until golden brown on each side.
- Mousse:
- Place all the mousse ingredients in a blender and blend until it has a silky smooth consistency.
- Top the pancakes with the mousse and serve with mixed berries.
- Delicious and nutritious!
