Healthy Curry with delicious spices
Don’t be overwhelmed by the long list of spices - these can be bought cheaply and last a long time. Indian spice shops usually have everything you need at a fraction of the supermarket price. Chickpeas are well known for their health properties and are especially high in minerals such as magnesium, calcium and potassium. Chickpeas are also a great source of fibre to help keep your digestive system healthy. Once you try this healthy curry dish you will want to know how you ever did without it!Healthy Curry
- 1 large onion
- 3 cloves garlic
- 2 tsp turmeric
- 1 tsp paprika
- 1 tsp yellow mustard seeds
- 1 bunch of coriander
- 1 tsp grated ginger
- 1 tsp cumin
- 1 bay leaf
- 1 tsp black peppercorns
- 1 cinnamon quill or 1 tsp of ground cinnamon
- ½ tsp salt
- ½ tsp chilli powder
- 1 sweet potato
- 1 zucchini
- 2 cans organic chickpeas
- ½ litre of water
- 1 tin organic coconut milk
- 1 tbls coconut oil or ghee
- In a large pot gently pan fry onions, ginger and garlic in coconut oil or ghee on a high heat – be careful not to burn the garlic.
- Add zucchini, cinnamon, chilli, sweet potato and the rest of the spices and gently cook for 2 minutes, stirring frequently.
- Add water, coconut milk and chickpeas bring to the boil then turn down the heat to a medium heat and allow the curry to simmer for 20 minutes till the sweet potato is tender
- Serve with brown rice, quinoa or flat bread.
