Healthy Winter Salad: Yummy Pumpkin, Feta & Quinoa

Even though we need more healthy cooked food in the winter, it is still important to add some raw veggies to allow your body to naturally detox and aid in weight loss.

Pumpkin, Feta & Quinoa Healthy Winter Salad

One that includes both cooked and raw ingredients is the perfect way to get the right balance. This can be eaten either for lunch or a quick dinner, and will be a real crowd pleaser, if served at a dinner party.

Healthy Winter Salad

  • ½ Pumpkin
  • 1 cup Quinoa
  • 2 cups Water
  • 100 gm Goat’s Feta
  • 2 Small Chilies
  • ½ Iceberg lettuce
  • Olive oil
  • Salt and pepper

  • WINTER SALAD DRESSING
  • 3 tbsp Olive oil
  • 1 tbsp Apple Cider Vinegar
  • 2 tbsp Chopped Basil
  • Salt and Pepper
  1. Preheat the oven to 180C.
  2. Place Pumpkin in a baking tray and season with salt, pepper, chili and olive oil. Cook for about 45 minutes until tender. Remove from oven and leave to cool.
  3. Bring water to the boil in a medium sized saucepan
  4. When the water boils, add Quinoa to the pan, cover and return to the boil, then simmer very gently until just cooked (about 10 minutes) then remove from heat
  5. Chop the iceberg lettuce and place in a large bowl
  6. Once the Quinoa and Pumpkin have cooled, add them to the lettuce and toss through the feta cheese.
  7. Drizzle with dressing and your Yummy Healthy Winter Salad is ready to serve.
