Mother’s Day is the perfect day to spoil mum. So why not make her a healthy Mother's Day treat she will love – and makes her feel loved too. These vegan delights are so delicious and chock full of protein too – great if you’re on a Paleo Diet. The perfect little balls are a great to way to say I love you to someone who you care so much about.

It's time to indulge your Mum!

Your mum will thank you later when she still fits into her jeans the next day! Ingredients
  • ½ cup       Linseeds
  • 1 tsp           Chia seeds
  • ½ cup       Sunflower seeds
  • ½ cup       Coconut shredded/desiccated
  • ½ cup       Pumpkin seeds
  • ½ cup       Cashews
  • ½ cup       Tahini
  • ½ cup       Honey/Agave nectar
  • ½ cup       Dates
  • ¼ cup       Goji berries
  • 1 cup          Raw cacao powder
  • 1 tsp - 1 tbls Bee Pollen granules (Optional)
Method
  1. Blend all dry ingredients together till they are like a crumble
  2. Add in dry fruit and stir until well blended
  3. Add the wet ingredients and process till well mixed
  4. Take spoonfuls of mixture and roll into walnut sized balls with your hands
  5. Roll balls in a plate of shredded coconut
  6. Leave in fridge for 2 hours and there you have it!
