Winter is the perfect time to snuggle up with a warm bowl of soup. This easy Pumpkin Soup will satisfy the whole family, it’s light, healthy and a great vegetarian option.
Eat Pumpkin Soup for Winter Health
Pumpkin contains a substance called beta-carotene, which gives pumpkin its beautiful yellow colour. People who eat a diet high in beta-carotene are less likely to develop certain cancers and heart-related diseases. Pumpkin is also high in Zinc, Vitamin C and Potassium helping boost immunity in the cooler months.Pumpkin Soup Ingredients
- ½ Pumpkin
- 1 Onion chopped
- ½ Sweet Potato
- 2 Carrots
- 2 Celery Stalks
- 2 Cloves of Garlic chopped
- 1 Knob Ginger chopped
- ½ tsp Dried Chilli Flakes
- 1.5 litres of Water
- 1 tsp Olive Oil
- ½ bunch Coriander
Pumpkin Soup Method
- Peel potatoes, carrots and pumpkin and chop into small squares
- Turn on a large pot to a high heat and fry the garlic and onion lightly in the olive oil and then add the vegetables and spices
- Once vegetables start to steam add the water and bring to the boil
- Turn down the heat and let cook for about an hour
- Blend till desired consistency and serve with fresh coriander
