Eat Pumpkin Soup for Winter Health

Pumpkin contains a substance called beta-carotene, which gives pumpkin its beautiful yellow colour. People who eat a diet high in beta-carotene are less likely to develop certain cancers and heart-related diseases. Pumpkin is also high in Zinc, Vitamin C and Potassium helping boost immunity in the cooler months.

Pumpkin Soup Ingredients

  • ½ Pumpkin
  • 1 Onion chopped
  • ½ Sweet Potato
  • 2 Carrots
  • 2 Celery Stalks
  • 2 Cloves of Garlic chopped
  • 1 Knob Ginger chopped
  • ½ tsp Dried Chilli Flakes
  • 1.5 litres of Water
  • 1 tsp Olive Oil
  • ½ bunch Coriander

Pumpkin Soup Method

  1. Peel potatoes, carrots and pumpkin and chop into small squares
  2. Turn on a large pot to a high heat and fry the garlic and onion lightly in the olive oil and then add the vegetables and spices
  3. Once vegetables start to steam add the water and bring to the boil
  4. Turn down the heat and let cook for about an hour
  5. Blend till desired consistency and serve with fresh coriander
