This dessert is a rich and decadent cake that will promote wellbeing and boost energy. It is vegan, gluten free, dairy free, flourless – but so full of flavour!
Cacao is high in antioxidants which fight free radicals, rich in magnesium which is important for heart health, and neurotransmitters which help to lift your mood.
Almonds are also high in magnesium and potassium which, important for muscle and nerve function, are also high in vitamin E which is another antioxidant. Almonds are also high in protein to help build and repair the body, sustain lean muscle, balance your blood sugar levels and keep you feeling full.
Coconut nectar is a low GI sweetener, and unknown to most people is actually quite high in mineral content when compared to other sugars.
Coconut oil helps to increase levels of the beneficial HDL cholesterol which is good for heart health. Studies also suggest that coconut oil may be useful for all aspect of brain health and memory.
So for all you cake lovers out there, this could be the one!

- Dry Ingredients
- 2½ cups almond meal
- ½ tsp bicarbonate of soda
- ½ tsp baking powder
- ½ cup Power Super Foods Equadorian gold cacao powder
- 3 tbsp flaxseed meal
- Wet Ingredients
- 180 ml water
- ½ cup Ecomil almond milk
- ¼ cup Loving Earth coconut nectar
- ½ cup Loving Earth cold pressed coconut oil (melted)
- Ganache
- 100 g Loving earth 72% dark chocolate
- ½ cup Spiral organic coconut cream
- Preheat oven to 160 C. Grease a 20cm spring form pan and line the base with baking paper.
- Combine all the dry ingredients in a bowl.
- Slowly add the wet ingredients mixing between each addition.
- Mix thoroughly.
- Pour into prepared pan.
- Bake for 55 minutes or until just cooked through.
- Remove from the oven. The inside of the cake will be a little moist. Cool completely on a wire tray.
- Once cake has cooled down, melt chocolate and mix with coconut cream over a double boiler. Mix till smooth.
- Pour ganache and spread over cake. Decorate as desired.
